If i had a smoker that was made for smoking (instead of me making do with a grill) i would likely have a better product. Maybe one day i will make it a priority
A smoker makes a huge difference! I have never used an upright smoker so I can comment on those but my smoker pit has made all the difference.

i used to have a smokey joe. It was a smallish, round bullet type smoker. It worked great for smoking lightly over a short time. Otherwise, you had to take it apart to turn the coals and add some fresh wood (you had to use charcoal primarily or it wouldn't burn more than an hour or two). To take it apart meant pulling the meat off, then figuring out how to get your fingers down between the hot bowl of water and the hot frame of the smoker to life the water bowl out (careful not to put half of it into the fire). Then, when you were ready to start again, redo the whole process.

I think if i would have put it in a very protected place it would have performed better. If it was windy the temperature just wouldn't stay up.

I like my current grill, and there is a smoker box accessory for it for about 75 bucks. Been planning on getting it...but other things took priority (got a super sweet 9mm and .40 s&w). With summer coming up, it would be a great investment. Especially with my looming 15 hour days coming up.

I read about the smoker box accessory thing, heard they work but don't know.
The smoker I used to use was big enough for 3 brisket's, so when I used it felt like I had to cook 3 each time. Neighbors sure did like that as they were given at least a 1/2 cause we couldn't eat that much. 12 hours smoking time.

You three people, are cooks. So get busy and feed your family. I just burn meat.

A positive attitude may not solve all your problems, but it will annoy enough people to make it worth the effort.

I am so sorry I don't live up to your standard of perfection. There might be a misspelled word or a typo above.

This thread is a good place to clear my conscience: I ordered and ate grilled tofu as an appetizer at a restaraunt in Santa Fe. And I liked it.

I'm west Texas, not venturesome at all. Never tasted that stuff. What is it, the old redneck replies? What's it made out of?

Soybean curd. It's mostly tasteless, but will take on and marry with other flavors well. It's high in protein and is frequently used as a meat substitute.

i love decent tofu (none of that rotten stinky tofu crap). i really like it in miso soup.

It also is high in botanical versions of estrogen, making it risky to eat in really high volumes for some women (but an excellent natural hormone therapy) due to breast cancer risk.

i am a fan of soybean.
